Kale-Spinach Heaven

This is one of my FAVORITE combos when it comes to salad. Please disregard the See’s candy ;)

Ingredients:

  • 2 cups of spinach
  • 2 cups of kale
  • 2 cups of cooked quinoa
  • 2 cups of baby carrots
  • 2 bell peppers of the color of your choice, cut into small squares
  • 3 stalks of celery, cut into tiny chunks
  • Fat Free Balsamic Vinaigrette, sparingly

Cooking quinoa~

Place 2 cups of water and 2 cups of quinoa into small sauce pan, bring to a boil, and then turn off stove and let stand for 15 minutes.

Then, simply place all ingredients into a large bowl, mix, and ENJOY!
