I sometimes like to participate in What I Ate Wednesdays as a way to keep myself in check in the food department. However, I am so excited because I have been reunited with fruits and veggies as of Monday & I just have to share my meals with you for Monday, instead of today!
So, I suppose we can call this post “What I Ate Monday… Because Kaylie is too Anxious to Wait Until Wednesday… & Is Assuming That Everyone Will Be Interest to Hear What She Ate Yesterday.” Okay, I’m done. ![]()
After going to the store Sunday to pick up some produce (finally!), I made up for lost time. My Monday meals consisted of the following:
Breakfast: Greenberry Shakeology with kale, spinach, berries, and green machine. I am really enjoying taking a Shakeology to work for my early morning shifts. I hate to say it, but this gives me so much more energy than a cup of coffee ever would! Plus- I can blend it the night before and not even have to think about making breakfast in the morning.
Snack: 1 Cutie orange, bell peppers, cherry tomatoes, and hummus. I forgot to take a picture of the cutie, because I scarfed it down! But I will say that it was delicious. ![]()
Lunch: Kale salad, Turkey Sandwich with avocado (not pictured) I added a Laughing Cow Cheese and spicy hummus to the bread of my sandwich- delicious!
Snack: Cinnamon Swirl Bread from Trader Joes… okay, this was a momentary lapse of judgment. But I kind of forgot to eat enough protein and, whenever this happens, I tend to crave yummy carbs such as this. Anyway moving on…
Dinner: A weeknight dinner date with Kevin at True Foods Kitchen, a local health food restaurant that we love! I had the roasted chicken and quinoa and Kevin had sea bass with Brussels Sprouts. We ate off each other’s plates because we both wanted to try both dishes.

Fun fact- did you know that we went to this restaurant for Emily’s Birthday last year and saw her favorite baseball player, Jared Weaver? Well now you do. ![]()
Even though it was only for 3 days, my life without veggies and fruit is just a sad life. My only problem? I didn’t have any tea! I don’t know guys, maybe I am getting sick or something, but I just haven’t felt like drinking tea as of late.
Oh wait- never mind, my tea craving is back because I started talking about it. HA.
Alrighty, well I better get going- I’ve got lots of work to be done & lots of people to train today! See you all tomorrow!

I have never tried roasting cherry tomatoes! That is such a good idea!
I LOVE tea haha….drinking it as I read this
And my favorite vegetable would be pickles…random I know, but I can polish off a jar of those no problem! Tomatoes, carrots, celery, and leeks would be a close second

Haha you are just like me! I have tons of favorites when it comes to veggies! And loving pickles is not weird at all- although my boyfriend would not like you.. he hates pickles and freaks out when someone eats one in front of him, haha.
